8 EASY Weeknight Dinners Your Family Will LOVE!

If you’re a tired and/or busy mom this is perfect for you! Most of us moms are depleted towards the end of the day. Even with a meal plan we still want it to be as easy as possible on a weeknight. These meals can be prepared quickly with just a handful of ingredients. If you want to save time and your sanity, check out the list below!
1. Pork Tenderloin with Broccoli and Rice.

Bake the pork tenderloin at 400° F for about 20-30 minutes. Check with a thermometer that the internal temperature is 145°. Let it rest for 5 minutes before cutting.
2. Chicken Caesar Wraps

Cook your chicken which ever way you enjoy (grilled, baked, fried) or use a store bought rotisserie chicken for your wrap!
3. Chili

Cook your beef and add in the remaining ingredients. Reduce the heat and let it simmer for about 15-25 minutes.
4. Quick & Easy Sub Sandwiches

You can either do store bought sub sauce or make your own! To make your own you will need to combine red wine vinegar, olive oil, salt, pepper, dried oregano.
5. Mexican Casserole

Combine cooked rice with salsa, black beans, corn and put in a casserole dish. I also add in spices such as cumin, chili powder, and garlic powder. Add cheese on top (1-2 cups of cheddar or Mexican cheese blend) and place in the oven at 350° for about 10 minutes to melt the cheese.
6. Pasta with Alfredo Sauce

Melt half cup of unsalted butter, add in 2 cups of heavy whipping cream. Continuously stir in parmesan cheese until it is melted and add 1 yolk and stir. Add to cooked pasta.
7. Chicken Burgers

Mix ground chicken with 1 block (cut cubed) cheese, whatever spices you prefer, and 1 table spoon of Worcestershire sauce. You can either cook in a pan or oven until internal temperature reaches 165° F.
8. Vegetarian Tostadas
